An in-depth exploration of Noma’s philosophy, ingredients, and innovative dishes.

René Redzepi is celebrated for revolutionizing Nordic cuisine, with his Copenhagen restaurant, Noma, hailed as the best in the world by the San Pellegrino World’s 50 Best Restaurant awards in 2010. It also received the exclusive ‘Chef’s Choice’ award in 2009. Since opening Noma in 2003 within a restored eighteenth-century warehouse, Redzepi has blended cutting-edge creativity with exceptional craftsmanship and a deep understanding of Nordic ingredients.

At Noma, diners experience extraordinary dishes like ‘Newly-Ploughed Potato Field’ and ‘The Snowman from Jukkasjarvi,’ all meticulously designed to showcase the unique flavors of the Nordic terroir. Redzepi’s dedication to authenticity extends to serving food on pebbles gathered from the very fields where the ingredients grow.

His quest for exceptional produce takes him foraging in local fields, sourcing horse-mussels from the Faroe Islands, and obtaining the purest water from Greenland. Redzepi elevates the philosophy of using seasonal, regional, and sustainable ingredients to an art form, resulting in a truly remarkable cuisine.

This book offers a rare glimpse into the history and philosophy behind Noma, detailing the sourcing of ingredients, the creative experimentation involved in crafting the dishes, and the cultural importance of dining at this iconic restaurant.

Included are over 90 of Redzepi’s recipes-the most extensive collection ever published-alongside a stunning series of commissioned photographs capturing the food, atmosphere, and the Nordic landscapes that inspire his culinary vision.
